Andalusian Beef & Chickpea Sopa
1. Heat the oil in a soup pot over medium to high heat. Add the onions and sauté for 2 minutes; add the garlic and beef tips and toss to coat.
2. Add all the remaining ingredients using water if necessary to just cover. Bring just to a boil, reduce heat and simmer for 30 minutes. Taste and adjust seasoning if necessary.
