Rancher Carne Asada

4 (about 2 pounds) Angus Beef Ribeye Steaks, cut ¾ inch thick
2 tablespoons fresh lime juice
½ cup shredded Colby or Monterey Jack cheese
8 medium flour tortillas, warmed
1 cup salsa


1. Sprinkle beef steaks with lime juice.

2. Place steaks in center of grid over medium, ash-covered coals. Grill steaks, uncovered, 7 to 10 minutes (over medium heat on preheated gas grill, covered, 7 to 9 minutes) for medium-rare (145°F) to medium (160°F) doneness, turning occasionally.

3. Top steaks with cheese. Serve with tortillas and salsa.
