Beer & Onion Brisket
- Preheat oven to 325°F.
- Prepare your fresh brisket. 4 lbs makes about 6 servings!
- Trim excess fat from brisket.
- Thinly slice onions.
- Layer 1/2 onion slices in a large roasting pan.
- Place brisket over onions. Sprinkle with garlic and pepper.
- Top with remaining onion.
- Combine beer and chili sauce. Pour evenly over brisket.
- Cover tightly with foil. Cook for 2 hours and 45 minutes.
- Pull pan out of oven and spoon sauce over brisket.
- Surround with potatoes and cover. Cook for 45 minutes more.
- Transfer brisket to carving board. Put potatoes in a serving bowl.
- Skim fat from the drippings. Then, transfer to a saucepan.
- Cook over medium heat for 5 minutes.
- Carve brisket into thin slices.
- Serve with potatoes. Add sauce and enjoy!
