Beer & Onion Brisket

Easy does it with this flavorful-yet-foolproof dish! Cook one up for your next gathering with friends and family.

  1. Preheat oven to 325°F.
  2. Prepare your fresh brisket. 4 lbs makes about 6 servings!
  3. Trim excess fat from brisket.
  4. Thinly slice onions.
  5. Layer 1/2 onion slices in a large roasting pan.
  6. Place brisket over onions. Sprinkle with garlic and pepper.
  7. Top with remaining onion.
  8. Combine beer and chili sauce. Pour evenly over brisket.
  9. Cover tightly with foil. Cook for 2 hours and 45 minutes.
  10. Pull pan out of oven and spoon sauce over brisket.
  11. Surround with potatoes and cover. Cook for 45 minutes more.
  12. Transfer brisket to carving board. Put potatoes in a serving bowl.
  13. Skim fat from the drippings. Then, transfer to a saucepan.
  14. Cook over medium heat for 5 minutes.
  15. Carve brisket into thin slices.
  16. Serve with potatoes. Add sauce and enjoy!

2 medium white onions, thinly sliced
2 large garlic cloves, minced
3/4 tsp coarsely ground pepper
1 cup beer
1/2 cup chili sauce
2 lbs small potatoes
