Classic Pot Roast

Tender, delicious and so easy. Set it and forget it!

  1. Cut chuck roast in half, then sprinkle all over with 1 tsp salt and ½ tsp pepper.
  2. Add and heat the oil on medium-high heat (“Sauté” mode on Instant Pot) and then sear roast on both sides (2-3 minutes). Remove beef and set aside.
  3. (Set Instant Pot to Sauté: “Normal” setting). Add onion and garlic to pot, sprinkle with ½ tsp of salt, and sauté until softened. Add beef broth, rosemary and thyme. (Set to “High” heat). Bring to simmer.
  4. Add two pieces of chuck roast back into Instant Pot and top with crushed tomatoes.
  5. Lock on lid; make sure lid set to “Seal”.
  6. Set Instant Pot to Pressure cook 70 min on “High”.

Serve and enjoy this delicious pot roast recipe with potatoes or over noodles for a wonderful comfort meal. It will make approximately 6 servings.


1 boneless chuck (or blade) roast (3 lbs)
1 ½ tsp kosher or sea salt, divided
1 tbsp vegetable oil
1 large onion, diced
4 cloves garlic, crushed
1 cup beef broth
1 sprig fresh rosemary
3 sprigs fresh thyme
1 (15 oz) can crushed tomatoes
1/2 tsp fresh ground black pepper
