Classic Pot Roast
- Cut chuck roast in half, then sprinkle all over with 1 tsp salt and ½ tsp pepper.
- Add and heat the oil on medium-high heat (?Sauté? mode on Instant Pot) and then sear roast on both sides (2-3 minutes). Remove beef and set aside.
- (Set Instant Pot to Sauté: ?Normal? setting). Add onion and garlic to pot, sprinkle with ½ tsp of salt, and sauté until softened. Add beef broth, rosemary and thyme. (Set to ?High? heat). Bring to simmer.
- Add two pieces of chuck roast back into Instant Pot and top with crushed tomatoes.
- Lock on lid; make sure lid set to ?Seal?.
- Set Instant Pot to Pressure cook 70 min on ?High?.
Serve and enjoy this delicious pot roast recipe with potatoes or over noodles for a wonderful comfort meal. It will make approximately 6 servings.
