Parmesan-Crusted Strip Roast

Be the host with the roast at your next dinner party with this savory recipe.

  1. Preheat oven to 325°F.
  2. Mix cheese, parsley, and shallots in a food processor until finely ground.
  3. Transfer to medium bowl. Stir in panko.
  4. Coat roast evenly with mixture.
  5. Place fatty side up on rack in roasting pan.
  6. Insert meat thermometer where thickest. Then roast!
  7. Roast 75 – 90 minutes. Medium rare: 135 ̊ F. || Roast 90 – 105 minutes. Medium: 145 ̊ F.
  8. To make the sauce, mix all ingredients in a separate, medium bowl.
  9. Cover and refrigerate until serving.
  10. Remove roast at desired doneness.
  11. Transfer to carving board. Tent loosely with foil.
  12. Let stand for 10-15 minutes.
  13. Carve into thin slices.
  14. Season with salt and pepper.
  15. Serve with sauce, garnish with fresh herbs and enjoy!


3-4 lbs beef strip roast
Salt and pepper
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
3 tbsp minced shallots
1/2 cup panko or rustic breadcrumbs

For Sauce:
1 cup sour cream
1/4 cup horseradish
1 tbsp lemon juice
2 tsp chopped fresh oregano
1/4 tsp salt
