Parmesan-Crusted Strip Roast
- Preheat oven to 325°F.
- Mix cheese, parsley, and shallots in a food processor until finely ground.
- Transfer to medium bowl. Stir in panko.
- Coat roast evenly with mixture.
- Place fatty side up on rack in roasting pan.
- Insert meat thermometer where thickest. Then roast!
- Roast 75 – 90 minutes. Medium rare: 135 ̊ F. || Roast 90 – 105 minutes. Medium: 145 ̊ F.
- To make the sauce, mix all ingredients in a separate, medium bowl.
- Cover and refrigerate until serving.
- Remove roast at desired doneness.
- Transfer to carving board. Tent loosely with foil.
- Let stand for 10-15 minutes.
- Carve into thin slices.
- Season with salt and pepper.
- Serve with sauce, garnish with fresh herbs and enjoy!

Salt and pepper
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
3 tbsp minced shallots
1/2 cup panko or rustic breadcrumbs
For Sauce:
1 cup sour cream
1/4 cup horseradish
1 tbsp lemon juice
2 tsp chopped fresh oregano
1/4 tsp salt
