Marinated Skirt Steak Tacos
- Add skirt steak to a mixing bowl and then add all ingredients for Marinade. (Store bought varieties also work well). Pour into a sealable storage bag and refrigerate for 8 hours or overnight (turn over periodically).
- For chimichurri sauce blend all dry ingredients in a food processor/blender while slowly adding in the olive oil. Refrigerate until ready to use.
- Grill steaks for approximately 3 minutes per side (for medium rare). Remove from heat to rest for 10 minutes.
- Warm tortillas on grill for approximately 1 minute per side.
- Slice across the grain and serve steaks in the tortillas, spoon chimichurri sauce over top. Enjoy!

2 cups orange juice
4 cloves garlic
2 limes (juice and zest)
¼ cup tequila (optional)
2 tbsp crushed red pepper
Salt & pepper to taste
Chimichurri
4 garlic cloves
2 jalapenos
¼ cup red wine vinegar
½ cup chopped parsley
½ cup cilantro
3 limes (juice and zest)
1 cup extra-virgin olive oil
1 tsp kosher salt
1 tsp ground pepper
